Sugar Glazed Carrots

- 7 lbs baby carrots
- 3 cups water
- 2 cups firmly packed brown sugar
- 3 tablespoons orange juice concentrate
Directions

1Clean and peel carrots.

2Cut into 2 inch pieces.

3Combine water and brown sugar.

4Put carrots in another pan and bring to a boil; cook for 10 minutes.

5With the brown sugar, simmer till sugar is dissolved.

6Simmer for 5 minutes.

7Add orange juice concentrate; reduce heat and keep hot.

8Using slotted spoon, drain carrots and pack into hot jars, leaving 1 inch head space.

9Ladle hot syrup into jars covering carrots and leaving 1 inch head space

10Remove any trapped air bubbles

11You may need to add more syrup.

12Process jars at 11 lbs pressure for 30 minutes.
