  • 9-inch unbaked pie shell
  • 4 c. peeled, sliced apples
  • 12 oz. can Shasta diet red apple soda
  • 1/2 tsp. cinnamon
  • pinch of salt
  • 2 tsp. lemon juice
  • 3 Tbsp. butter
  • 2 Tbsp. cornstarch
  • whipped cream or ice cream or sliced Cheddar cheese

    Preheat oven to 350°.

    Melt butter in saucepan.

    Add cornstarch and diet soda.

    Cook over medium heat until mixtures comes to a boil.

    Add apples, spices and lemon juice.

    Bring to a second boil.

    Pour into pastry shell.

    Bake for about 45 minutes. Serve with whipped cream, ice cream or cheese.
