- 1/2 c. soy sauce
- 3 Tbsp. sugar
- 3/4 c. chicken broth
- 1/2 lb. fresh spinach
- 8 scallions
- 1 large onion, peeled
- 1 can sliced bamboo shoots
- 1 lb. thinly sliced beef tenderloin or sirloin
- 1/2 c. sliced fresh mushrooms
- 2 Tbsp. oil
- rice
Directions

1In bowl, combine soy sauce, sugar and broth.

2Prepare spinach. Snip into small pieces.

3Slice scallions into 2-inch lengths. Cut onion into 1/4-inch slices.

4Heat oil in wok or skillet.

5Add scallions, onion, mushrooms, bamboo shoots.

6Pour sauce mix over it and cook on high for 4 minutes.

7Push spinach and meat onto vegetables in wok.

8Simmer for 2 minutes.

9Push spinach and meat down into sauce.

10Cook 3 minutes. Serve on top of hot rice. Serves 4 to 5.
