Ingredients

  • 1/2 c. olive oil
  • 1/4 c. red wine vinegar
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1/4 tsp. black pepper
  • 1(19 oz.) can chick peas, drained
  • 1 (19 oz.) can red kidney beans, drained
  • 1 bell pepper, thin 1-inch strips
  • 1/2 medium red onion, thin strips
  • 1/4 c. chopped parsley
  • 2 (11 oz.) cans mandarin oranges, drained
  • lettuce leaves

Directions

    For dressing, whisk together oil, vinegar, salt, sugar and pepper; set aside.

    In large bowl, combine remaining ingredients except lettuce leaves.
