- 4 peaches, halved and pitted
- 3/4 cup fresh blueberries
- 3 tablespoons honey or agave
- 1 teaspoon vanilla extract
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon Ceylon cinnamon
- Zest from 1 lemon

1Preheat oven to 400 degrees.

2Place 2 peach halves, cut side up, onto a large sheet of heavy duty aluminum foil.

3In a small bowl, mix together blueberries, honey or agave, cinnamon and lemon juice. Spread mixture evenly among all peach halves.

4Fold foil tightly over peaches, ensuring that there is a tight seal.

5Place aluminum foil-wrapped peaches in a baking dish and roast until tender, about 15 minutes, depending on how ripe your peaches are.

6Carefully open foil pouches, allowing steam to escape.

7Garnish with lemon zest and serve immediately.
