Summer Mixed Salad

Ingredients

  • 2 tbsp white wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp sugar
  • 5 tbsp olive oil
  • 1 None small iceberg lettuce, sliced
  • 7 oz canned baby corn, drained
  • 4 None hardboiled eggs, shelled and cut into wedges
  • 1/2 bunch spring onions, sliced
  • 1/2 None small red onion, thinly sliced
  • 5 oz cherry tomatoes, halved
  • 4 oz Mozzarella cheese, sliced
  • None None basil leaves,to garnish

Directions

    To make the dressing, put the vinegar, lemon juice, sugar and oil in a bowl with a little seasoning and mix together.

    Scatter the lettuce in a salad bowl and arrange the corn, eggs, spring onions, red onion, tomatoes and mozzarella on top. Add the dressing and mix gently to combine. Serve garnished with basil leaves.
