- 2 medium size yellow squash
- 2 c. fresh spinach
- 1/2 c. sour cream
- 1/4 c. chopped onion
- bread crumbs
- thin shredded cheese
- pepper for flavor
Directions

1Cut squash lengthwise and boil for 5 minutes.

2Scoop out seeds.

3Bring 2 cups of spinach to a boil, drain when completed. Combine together spinach, chopped onion and sour cream. Place spinach inside each piece of squash.

4Sprinkle on bread crumbs, lightly.

5Finally top with shredded cheese.

6Bake at 325° for 30 minutes.
