Summer Squash Saute

- 2 bell peppers
- 2 medium sweet onion
- 2 large yellow summer squash
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1 tsp dried sage
- 1 cup day old cornbread crumbs
Directions

1Dice onion, pepper and slice squash.

2Heat olive oil in a large skillet.

3Add onion, pepper and squash and saute until onions turn clear.

4Add sage and salt.

5Continue saute until first sign of browning.

6Add cornbread crumbs to the saute.

7Blend in with vegetables and continue cooking until the vegetables reach a desired level of browning.

8Serves 4.

9This is a quick side dish.

10I made this on a whim because I got a great price on squash this week and happened to have some cornbread that was ok, but no longer fresh from the oven.

11It tastes breaded without the labor of preparing a breaded vegetable.
