- 1 c. onion, coarsely chopped
- 1 clove garlic, minced
- 2 tsp. olive oil
- 2 medium zucchini squash, cut into 1/4-inch slices
- 1 c. yellow squash, cut into 1/4-inch slices
- 1/2 tsp. dried basil
- 1/4 tsp. salt
- 2 c. tomatoes, chopped
- 1 to 2 Tbsp. Parmesan cheese
Directions

1Combine onion, garlic and oil in 10-inch nonstick skillet. Cook over medium heat for 2 to 3 minutes.

2Stir frequently.

3Add squash, basil and salt.

4Cook for 5 to 7 minutes or until squash is tender.

5Stir constantly.

6Stir in tomatoes.

7Cook for 1 to 2 minutes or until hot, stirring constantly.

8Remove from heat. Sprinkle with cheese.
