Summer Squash Scramble

Ingredients

  • 1 c. onion, coarsely chopped
  • 1 clove garlic, minced
  • 2 tsp. olive oil
  • 2 medium zucchini squash, cut into 1/4-inch slices
  • 1 c. yellow squash, cut into 1/4-inch slices
  • 1/2 tsp. dried basil
  • 1/4 tsp. salt
  • 2 c. tomatoes, chopped
  • 1 to 2 Tbsp. Parmesan cheese

Directions

    Combine onion, garlic and oil in 10-inch nonstick skillet. Cook over medium heat for 2 to 3 minutes.

    Stir frequently.

    Add squash, basil and salt.

    Cook for 5 to 7 minutes or until squash is tender.

    Stir constantly.

    Stir in tomatoes.

    Cook for 1 to 2 minutes or until hot, stirring constantly.

    Remove from heat. Sprinkle with cheese.
