- 2 yellow squash, sliced
- 2 zucchini, sliced
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 tablespoons of freshly chopped fresh basil (HAS to be fresh- dried doesn't work)
- 3 tablespoons extra virgin olive oil
- 2 garlic cloves, minced
Directions

1Saute squash and zucchini in olive oil on medium heat for 4 minutes.

2Add garlic and saute until squash and zucchini become transparent (about 2 or 3 more minutes).

3Remove from heat. Add basil and mozzarella and toss. Shake parmesan over the top and serve.
