Sunshine's Homemade Coconut Cream Pie

Ingredients

• 1 1/2 cup all purpose flour
• 1/4 tsp salt
• 1/2 cup Crisco shortening
• 3 to 4 tablespoon cold water
• 3/4 cup sugar
• 1/8 tsp salt
• 1/4 cup cornstarch
• 2 3/4 cup milk
• 3 large eggs yolks
• 1 cup coconut flakes divided
• 1 1/2 tbsp butter
• 1 tsp plus 1/4 teaspoon vanilla extract
• 3 egg whites room temp,
• 1/4 tsp cream of tartar
• 1/4 cup plus 1 tablespoon sugar
