- 3 cup cooked white rice
- 3 tbsp sesame oil
- 1 cup peas and carrots (thawed if using frozen)
- 1 small onion, chopped
- 1 tsp minced garlic
- 2 eggs, lightly beaten
- 1/4 cup soy sauce
Directions

1On medium high heat, heat oil in large skillet or wok.

2Add peas, carrots, onion &garlic.

3Stir fry until tender.

4Lower heat to medium low, push mixture off to one side.

5Pour eggs on other side of skillet and scramble.

6Add rice and soy sauce and mix together well.

7Stir fry until thoroughly heated.

8Optional: Add shrimp, chicken or pork for complete meal.
