  • 1 teaspoon Olive Oil
  • 1- 1/2 pound Tomatillos, Husks Removed
  • 1 whole Jalapeno
  • 1/4 whole Medium Sized Onion
  • 2 cloves Garlic, Peeled
  • 1/2 cups Cilantro
  • 1 Tablespoon Lime Juice

Directions

    Add olive oil, tomatillos, jalapeno and onion into a large skillet.

    Saute on high heat until caramelized on all sides, about 3-4 minutes.

    Transfer to a blender or food processor and add garlic, cilantro and lime juice.

    Blend until combined.

    You may have to do this in two batches.

    Place in the refrigerator to chill.
