- 3 sticks butter or margarine, room temperature
- 3 c. sugar
- 5 large eggs
- 3 c. flour
- 1 tsp. vanilla extract
- 1/2 tsp. lemon extract (or 1 tsp. grated lemon peel)
- 1/2 tsp. almond extract
- 7/8 c. ginger ale or similar soda
Directions

1Cream butter until light.

2Cream in sugar and beat until fluffy.

3Beat in eggs one at a time.

4Beat in 1 cup flour, then add extracts and ginger ale alternately until all used.

5Beat until smooth.

6Pour into two greased and floured loaf pans (9 x 5-inch) or one 10-inch tube pan.

7Bake in preheated 275° oven for about one hour and 45 minutes. (Baking time will be longer for the 10-inch pan.) Test for doneness with a toothpick.

8Let cool in pan.
