Super Pound Cake

Ingredients

  • 3 sticks butter or margarine, room temperature
  • 3 c. sugar
  • 5 large eggs
  • 3 c. flour
  • 1 tsp. vanilla extract
  • 1/2 tsp. lemon extract (or 1 tsp. grated lemon peel)
  • 1/2 tsp. almond extract
  • 7/8 c. ginger ale or similar soda

    Cream butter until light.

    Cream in sugar and beat until fluffy.

    Beat in eggs one at a time.

    Beat in 1 cup flour, then add extracts and ginger ale alternately until all used.

    Beat until smooth.

    Pour into two greased and floured loaf pans (9 x 5-inch) or one 10-inch tube pan.

    Bake in preheated 275° oven for about one hour and 45 minutes. (Baking time will be longer for the 10-inch pan.) Test for doneness with a toothpick.
