- 1 (8 1/2 ounce) box Jiffy corn muffin mix
- 1 pinch cayenne pepper
- 1 egg, lightly beaten
- 14 cup vegetable oil
- 1 (8 1/2 ounce) can corn, drained (no salt added)
- 23 cup heavy whipping cream
- 12 cup monterey jack and cheddar cheese blend, shredded
Directions

1Heat oven to 350.

2In a large bowl, mix the corn muffin mix, cayenne pepper, egg, and vegetable oil.

3Stir in the drained can of corn, the heavy whipping cream, and the cheese.

4Pour the mixture into a lightly greased 8-inch baking pan.

5Bake for 30-40 minutes or until a toothpick comes out clean from the center.

6Edges should just be starting to brown.
