- 2 tablespoons olive oil
- 2 tablespoons onion chopped
- 1 1/2 cups white rice
- 2 cups vegetable broth
- 1 cup salsa
Directions

1Add olive oil to a deep saute pan over medium-high heat.

3Add the rice and when it starts to brown, add the broth and salsa.

4Simmer, covered, for about 20 minutes. You may need to add more liquid.
