  • 2 tablespoons olive oil
  • 2 tablespoons onion chopped
  • 1 1/2 cups white rice
  • 2 cups vegetable broth
  • 1 cup salsa

Directions

    Add olive oil to a deep saute pan over medium-high heat.

    Add the rice and when it starts to brown, add the broth and salsa.

    Simmer, covered, for about 20 minutes. You may need to add more liquid.
