Ingredients

  • 2 lb. ground round
  • 1 large onion, chopped
  • 40 oz. refried beans
  • 2 (7 oz.) cans chopped green chilies
  • 5 c. shredded Jack or Cheddar cheese
  • 2 c. taco sauce
  • 1/2 bunch chopped green onions
  • small can chopped ripe olives
  • 3 avocados, mashed
  • 2 c. sour cream
  • 8 c. nachos
  • salt
  • pepper
  • parsley

Directions

    Brown beef and onion with salt and pepper; drain.

    Spread refried beans in a shallow 11 x 17-inch pan.

    Top evenly with meat, then green chilies with shredded cheese over chilies. Drizzle taco sauce over cheese.

    Bake at 350° for 30 minutes. Remove from oven and cover with onions (tops too) and chopped ripe olives.

    Heat 10 minutes more.

    Mound center with avocados; surround with sour cream and sprinkle with parsley.

    Quickly tuck nachos around edges.
