  • 1 lb. cooked pinto beans
  • 1 lb. bacon
  • 1 small onion, finely chopped
  • 2 chopped garlic cloves
  • 1 can evaporated milk
  • 2 c. shredded medium Cheddar cheese
  • salt and pepper to taste

Directions

    Cut bacon into small pieces and fry until crispy.

    Drain excess fat.

    Put bacon back into pan with garlic and onion; fry for about 5 minutes.

    Add pinto beans and mix with electric hand mixer, adding canned milk to desired consistency.

    Add cheese. Warm beans until cheese is melted.

    You may need to add more canned milk as the cheese melts.
