- 1/2 lb. dry pinto beans
- 5 c. chopped tomatoes
- 1 lb. green peppers, chopped
- 1 1/2 Tbsp. oil
- 1 1/2 lb. onions, peeled and chopped
- 6 cloves garlic, minced
- 1/2 c. chopped parsley
- 1/2 c. butter or margarine
- 2 1/2 lb. ground beef
- 1 lb. lean ground pork
- 1/3 c. chili powder
- 2 Tbsp. salt
- 1 1/2 tsp. black pepper
- 1 1/2 tsp. cumin
Directions

1Soak beans in water to cover overnight.

2Drain; cover with cold water and simmer until beans are tender, about 1 hour.

3Add tomatoes and simmer 5 minutes longer.

4Saute green peppers in hot oil until tender.

5Add onions and cook until tender, stirring frequently.

6Add garlic and parsley.

7In another skillet, melt butter and add beef and pork.

8Cook and stir 15 minutes or until crumbly and brown.

9Add meat to onion mixture and stir in chili powder.

10Cook 10 minutes.

11Add meat mixture to beans along with salt, pepper and cumin.

12Simmer, covered, 1 hour.

13Remove cover and simmer 30 minutes longer.

14Makes 8 to 10 servings.
