Swedish Fruit Salad

Ingredients

  • 2 whole eggs, beaten until light
  • 1/4 c. lemon juice
  • 1/2 c. sugar
  • 2 Tbsp. butter
  • 1 large can fruit cocktail, drained
  • 1 medium can of pineapple tidbits, drained
  • 1/4 c. maraschino cherries
  • 1/2 bag miniature marshmallows
  • 1 c. heavy cream

Directions

    Cook eggs, lemon juice and sugar over hot water until thick. Add butter, set aside and cool.

    Beat heavy cream and fold into cooled egg mixture.

    Add fruit and marshmallows.

    Let stand overnight.
