  • 2 egg whites
  • 1 c. sugar
  • dash of salt
  • 1/2 c. butter
  • 10 oz. semi-sweet chocolate
  • 3 egg yolks
  • 3 1/2 Tbsp. heavy cream
  • 2 1/2 Tbsp. anisette liqueur
  • 2 oz. unsalted butter, softened
  • cocoa for dusting
  • 4 very large cooking apples, preferably Northern Spy
  • 1 3/4 c. brown sugar
  • scant 1/4 c. all-purpose flour
  • speck of salt
  • 2 Tbsp. lemon juice
  • 3/4 c. water
  • 2 Tbsp. (1/4 stick) butter
  • ground cinnamon
  • ice cream or half and half
