Sweet Bulgur Pilaf

  • 23 cup thinly sliced green onion
  • 1 teaspoon minced garlic
  • 1 cup bulgur
  • 1 -2 tablespoon olive oil
  • 2 14 cups vegetable broth
  • 12 teaspoon ground cinnamon
  • 2 cups peeled seeded cubed butternut squash
  • 14 cup currants
  • 14 cup pine nuts, toasted
  • 14 cup finely chopped parsley
  • salt and pepper

Directions

    Saute green onions, garlic and bulgur in oil in large saucepan until onions are tender.

    Stir in broth and cinnamon and heat to boiling.

    Reduce heat and simmer 10 minutes.

    Stir squash and currants into bulgur mixture, simmer, covered, until squash is tender, about 15 minutes.

    Stir in pine nuts and parsley; season to taste with salt and pepper.
