  • 3 medium onions
  • 1/2 c. butter
  • 3 eggs
  • 1 c. sour cream
  • 1/4 tsp. salt
  • 1/2 pepper
  • 1/4 tsp. cayenne pepper
  • 1/2 c. grated parmesan cheese
  • 1 9 inch pie shell

Directions

    Preheat oven to 450°. Thinly slice onions. Saute onions in butter until soft and transparent. Remove from heat. In separate bowl, combine eggs, sour cream, salt, and peppers until smooth. Pour onions into pie shell. Pour egg mixture over onions. Sprinkle cheese on top. Bake at 450° for 15 minutes, then lower oven temperature to 350° until top is lightly brown, about 30 minutes.
