  • 1/2 c. mashed sweet potatoes
  • 2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 tsp. ground cinnamon
  • 2/3 c. buttermilk

    Mash coarsely the sweet potatoes and blend with the rest of the dry ingredients.

    Lightly mix dry ingredients with buttermilk, stirring with a spoon. Sweet potatoes can be moist or dry so adjust the amount of buttermilk to form a smooth dough. Spread the biscuit dough out 1/2-inch thick on a floured counter. Cut and bake in a 400° oven until well browned, about 15 minutes.
