Sweet Potato Dumpling

  • 10 biscuits (homemade or canned)
  • 2 c. sugar
  • 1 stick margarine
  • 10 slices raw sweet potatoes
  • 2 1/2 c. water
  • 2 Tbsp. cornstarch
  • 1 tsp. cinnamon

Directions

    Roll out individual biscuits. Place thin slice of sweet potato on biscuit and pinch dough together. Melt 1 stick margarine in 9 x 13 pan. Place dumpling pinched side down in butter. Boil water, sugar, cornstarch and cinnamon until thickened. Pour over dumplings. Bake at 350° about 30 minutes or more if needed.
