Sweet Potato Layer Cake

  • 2 c. sugar
  • 4 eggs, separated
  • 1 1/2 c. finely shredded uncooked sweet potato
  • 1/4 c. hot water
  • 1 tsp. vanilla extract
  • 2 1/2 c. cake flour
  • 3 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 1 c. pecans, chopped

    In a mixing bowl, beat oil and sugar. Add egg yolks, one at a time, beating well after each addition. Add sweet potato, water and

    vanilla; mix well. In a small mixing bowl, beat egg whites until stiff, fold into the sweet potato mixture. Combine flour, baking powder, cinnamon, nutmeg and salt; add to potato mixture. Stir in pecans. Pour into three greased 9 inch round cake pans. Bake at 350° for 22-27 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to wire racks.
