Ingredients

  • 1 (1 1/2 to 2 lb.) flank steak, cut in slivers against the grain
  • 3/4 c. soy sauce
  • 3 green peppers, cut in narrow strips
  • 3 Tbsp. salad oil
  • juice drained from pineapple
  • 1 (1 lb. 4 oz.) can pineapple tidbits, drained
  • 3 Tbsp. cornstarch
  • 3 Tbsp. vinegar
  • 1 Tbsp. soy sauce
  • 6 Tbsp. water
  • 1/2 c. sugar

    Place steak in shallow dish.

    Add 3/4 cup soy sauce; mix well so all the beef will marinate.

    Allow to stand at least 30 minutes.

    Cook pepper strips in salad oil until limp and glazed; do not overcook.

    Remove from pan.

    Add beef to skillet; cook quickly, stirring occasionally.

    Reduce heat to low and add pineapple juice and cook slowly for 10 minutes.

    Add tidbits and peppers.
