  • 3 Tablespoons Grapeseed Oil
  • 1 whole Onion, Diced
  • 1 bunch Swiss Chard, Stems And Leaves Separated
  • 1- 1/2 cup Arborio Rice
  • 1/2 cups White Wine
  • 5- 1/2 cups Vegetable Broth, Heated
  • 1/4 cups Raisins, Soaked, Drained, And Chopped
  • 3/4 cups Parmesan Cheese, Grated

    Heat oil in a large stock pot.

    Saute onions until caramelized.

    Add chard stems and rice and saute 3 minutes.

    Add white wine and stir until evaporated.

    Add chard leaves until wilted, about 3 minutes.

    Add 1/2 cup heated broth, stir until evaporated.

    Continue adding broth in 1/2-cup increments until rice is al dente.

    Stir in raisins until incorporated.

    Remove from heat and stir in 1/2 cup parmesan cheese.
