- 3 Tablespoons Grapeseed Oil
- 1 whole Onion, Diced
- 1 bunch Swiss Chard, Stems And Leaves Separated
- 1- 1/2 cup Arborio Rice
- 1/2 cups White Wine
- 5- 1/2 cups Vegetable Broth, Heated
- 1/4 cups Raisins, Soaked, Drained, And Chopped
- 3/4 cups Parmesan Cheese, Grated
Directions

1Heat oil in a large stock pot.

2Saute onions until caramelized.

3Add chard stems and rice and saute 3 minutes.

4Add white wine and stir until evaporated.

5Add chard leaves until wilted, about 3 minutes.

6Add 1/2 cup heated broth, stir until evaporated.

7Continue adding broth in 1/2-cup increments until rice is al dente.

8Stir in raisins until incorporated.

9Remove from heat and stir in 1/2 cup parmesan cheese.

10Serve individual plates with remaining cheese.
