- 2 lb. round steak (1 inch thick)
- 2 Tbsp. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. shortening
- 1/2 c. onion, finely chopped
- 1/2 c. celery, finely chopped
- 1/2 c. carrots, finely chopped
- 1 c. canned tomatoes
Directions

1Combine flour and seasoning.

2Dredge mixture thoroughly into both sides of steak.

3Cut into serving pieces.

4Place fryer over medium heat and add shortening.

5Brown meat well on both sides. Mix vegetables and place over meat.

6Cover and reduce heat to low and simmer until tender, about 1 1/2 hours.

7Thicken remaining sauce for gravy.

8Serves 6.
