Swordfish Provençal

  • 1/4 cup olive oil
  • 6 None green onions, trimmed and cut into thirds
  • 1 clove garlic, thinly sliced
  • 1 1/2 tbsp fresh rosemary leaves, coarsely chopped
  • 1 tbsp fresh lemon thyme leaves, coarsely chopped
  • 4 None swordfish steaks (6-7 oz each)
  • 1 lb mixed tomatoes, coarsely chopped
  • 1/3 cup dry white wine
  • 1/4 cup mixed pitted olives

Directions

    Heat oil in large deep skillet on medium heat. Cook onions and garlic until onion has softened. Season fish; add to pan with herbs. Cook for 2 mins each side.

    Add tomatoes, wine and olives to pan. Cover and cook for 5 mins, or until fish is cooked to desired doneness. Season to taste.
