- 1/4 cup olive oil
- 6 None green onions, trimmed and cut into thirds
- 1 clove garlic, thinly sliced
- 1 1/2 tbsp fresh rosemary leaves, coarsely chopped
- 1 tbsp fresh lemon thyme leaves, coarsely chopped
- 4 None swordfish steaks (6-7 oz each)
- 1 lb mixed tomatoes, coarsely chopped
- 1/3 cup dry white wine
- 1/4 cup mixed pitted olives
Directions

1Heat oil in large deep skillet on medium heat. Cook onions and garlic until onion has softened. Season fish; add to pan with herbs. Cook for 2 mins each side.

2Add tomatoes, wine and olives to pan. Cover and cook for 5 mins, or until fish is cooked to desired doneness. Season to taste.
