  • 2 teaspoons dark sesame oil
  • 1 (1-pound) pork tenderloin, cut into 1-inch pieces
  • 2 teaspoons minced peeled fresh ginger
  • 3 garlic cloves, minced
  • 1 red bell pepper, cut into strips
  • 1/3 cup picante sauce
  • 2 tablespoons natural peanut butter (such as Smucker's)
  • 1 tablespoon low-sodium soy sauce
  • 1 1/2 cups hot cooked brown rice
  • 1/4 cup sliced green onions

    Heat oil in a nonstick skillet over medium-high heat. Add pork, ginger, and garlic; stir-fry 1 minute. Add bell pepper; stir-fry 2 minutes. Add picante sauce, peanut butter, and soy sauce; stir-fry 3 minutes or until pork loses its pink color and sauce is thick.
