Ingredients

  • 125 g cracked wheat
  • 1 cup fresh parsley, finely chopped
  • 4 spring onions, finely chopped
  • 250 g tomatoes
  • 1/3 cup of fresh mint, finely chopped
  • 1 onion, finely chopped
  • 1/3 cup lemon juice
  • 1/3 cup extra virgin olive oil, preferably
  • 1 pinch chili powder

Directions

    Soak wheat in cold water for a couple of hours.

    Drain and rinse well.with cold water.
  3. 3
    Dry thoroughly. I use paper towels to pat as dry as possible.

    Mix all ingredients together.

    Refrigerate until required.
