  • 1/2 cups Bulgur
  • 1 cube Boiling Water
  • 1 cup Cherry Tomatoes, Seeded And Halved
  • 1 whole Cucumber, Peeled, Cut In Half Lengthwise, Seeds Removed, Then Finely Diced
  • 3/4 cups Chopped Parsley
  • 1/4 teaspoons Chopped Fresh Mint
  • 2 whole Finely Minced Scallions
  • Salt And Pepper, to taste
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Lemon Juice

    First you need to pre-soak your bulgur. Place the bulgur in a heatproof bowl. Pour the boiling water over it and let it stand for about 1 hour. In a salad bowl combine the pre soaked bulgur with the remaining ingredients, including olive oil and fresh lemon juice. Then toss well and adjust the seasoning if you think it is necessary.
