Ingredients

  • 3 bunch parsley
  • 1/2 cup fine bulgur
  • 3 roma tomatoes, diced
  • 6 green onions, thinly sliced including green stems
  • 1/2 cup extra virgin olive oil
  • 1 each juice of 3 -4 lemons
  • 1 handful fresh mint, finely sliced (optional)
  • 1 salt -to taste

Directions

    Soak bulgur in juice of 1 lemon til absorbed and appearance is dry.

    Fluff with a fork.

    Rinse and chop parsley leaves.

    If using mint, chop and add to chopped parsley in a large bowl.

    Add chopped tomatoes and sliced green onion.

    Toss and combine.

    Add juice from remaining lemons.

    Add your fluffed bulgur to the parsley mixture as well as the olive oil.

    Mix til combined, adding salt as needed.
