- 1 c. cracked wheat (fine)
- 1 bunch green onions
- 2 bunches parsley
- 1/2 bunch mint
- 4 large tomatoes
- juice of 1 1/2 to 2 lemons
- olive oil or vegetable oil
- salt and pepper
Directions

1Soak wheat in water a few minutes.

2Squeeze dry between palms of hands.

3Chop onions, parsley, mint and tomatoes very fine.

4Add wheat, lemon juice, oil, salt and pepper.

5Mix well.

6Serve on fresh lettuce.
