- 2 cups cracked bulgur wheat
- 5 -6 firm ripe tomatoes or 5 -6 green tomatoes
- 2 bunches of fresh mint
- 2 bunches fresh parsley
- 1 bunch green onions or 1 bunch scallion
- 5 -9 key limes, juice of
- 1/4 - 1/2 cup olive oil (to taste)
- salt and black pepper
- tender lettuce leaf
Directions

1Soak the bulgur wheat in enough water to cover for 30 minutes. Meanwhile finel chop the tomatoes, the parsley and mint and the green onions ( tender green and white parts). Drain the wheat and mix in a large bowl with the rest of the ingredients. Let rest in the refrigerator so the flavor develops. Serve with the lettuce leaves.
