  • 1 c. dry bulgur wheat
  • 1 c. fresh lemon juice
  • 4 cloves garlic, minced
  • 1 bunch green onions, sliced
  • 1 c. packed minced parsley
  • 1/4 c. minced fresh mint or 2 tsp. dried mint, crumbled
  • 2 large ripe tomatoes, diced
  • 1 large cucumber, peeled and diced
  • 1/4 c. olive oil
  • fresh ground pepper

Directions

    Place the bulgur with cold water to cover in a large bowl. Set aside for 30 minutes, until most of water is absorbed.

    Drain the bulgur, squeezing out excess water.

    Toss the moist bulgur with all the remaining ingredients.

    Refrigerate at least 2 to 3 hours.
