- 1 c. dry bulgur wheat
- 1 c. fresh lemon juice
- 4 cloves garlic, minced
- 1 bunch green onions, sliced
- 1 c. packed minced parsley
- 1/4 c. minced fresh mint or 2 tsp. dried mint, crumbled
- 2 large ripe tomatoes, diced
- 1 large cucumber, peeled and diced
- 1/4 c. olive oil
- fresh ground pepper
Directions

1Place the bulgur with cold water to cover in a large bowl. Set aside for 30 minutes, until most of water is absorbed.

2Drain the bulgur, squeezing out excess water.

3Toss the moist bulgur with all the remaining ingredients.

4Refrigerate at least 2 to 3 hours.
