Ingredients

  • 1 c. dry Bulgur Wheat
  • 1 1/2 c. boiling water
  • 1 1/2 teaspoon salt
  • 1/4 c. fresh lemon juice
  • 1 heaping teaspoon crushed fresh garlic
  • 1/2 teaspoon dry mint
  • 1/4 c. extra virgin olive oil
  • Fresh black pepper
  • 1/2 c. minced scallions, include green part
  • 2 med. tomatoes, diced
  • 1 packed c. fresh minced parsley
  • 1 minced cucumber or possibly summer squash
  • Optional:
  • 1/2 c. cooked chick peas
  • 1/2 c. coarsely grated carrot
  • 1 minced green pepper

Directions

    Combine bulgur wheat, boiling water and salt in large bowl.

    Cover and let stand 15-20 min.

    Add in lemon juice, garlic, oil and mint; mix thoroughly.

    Chill 2-3 hrs or possibly overnight.

    Just before serving add in vegetables and black pepper; mix gently.

    Garnish with feta cheese and black olives.
