  • 1 pound Ground Turkey
  • 2 Tablespoons Taco Seasoning
  • 1 can (15 Oz. Size) Corn With Red And Green Peppers, Drained
  • 1/2 cups Refried Beans
  • 1 cup Salsa, If Desired
  • 1 cup Cheese, If Desired
  • 1 cup Sour Cream, If Desired

    Preheat oven to 350 degrees F.

    Microwave the tortillas for 30 seconds.

    Line each of 8 muffin cups with 1 tortilla, carefully folding back the edges, leaving an opening in the center for the filling.

    Bake the empty tortilla for 10 minutes.

    Meanwhile, brown the ground turkey in a large skillet over medium heat with the taco seasoning and about 1/4 cup water.

    Once the meat is browned, add the corn and simmer until corn is heated through.

    Spoon about 1 Tablespoon of refried beans into the bottom of your tortilla cup, and top with meat mixture.
