- 3 eggs Jumbo eggwhites, you can use whole, I just like to save fat, calories and cholesterol by eliminatin
- 2 tablespoons salsa preferably hot and spicy!
- 1 slice American cheese fatfree/ 2% fat
- salt pinch
- black pepper coarse
- 2 tablespoons chopped cilantro finely
- Pam Cooking Spray
Directions

1Spray skillet with PAM and set on medium low heat.

2Separate the eggwhites in a bowl, add salt, pepper, and cilantro.

3Mix until combined.

4Pour into hot skillet and cook on med-low heat until bubbling.

5Flip over and cook the other side.

6On one side of the omelette, add the slice of cheese and fold over the other side to make a taco shape.

7Cook until cheese is melted.

8Transfer to a plate, top with salsa, garnish with cilantro and DIG IN!
