  • 1 Tbsp. bacon fat or vegetable oil
  • 1 lb. ground beef
  • 3/4 c. chopped green onions
  • 1 clove garlic, minced
  • 1 (10 1/2 oz.) can condensed beef consomm
  • 1/2 c. Sauterne
  • 1 (12 oz.) can Mexican-style corn
  • 1 (6 oz.) can tomato paste
  • 1 Tbsp. chili powder
  • 1/2 tsp. ground cumin
  • 4 drops hot pepper sauce
  • salt
  • 3 tortillas, each torn in eighths
  • 3/4 c. sharp Cheddar cheese
  • 1 c. shredded lettuce
  • 1 large avocado, cut in thin slices
  • 1 medium tomato, cut in thin slices

    Put bacon fat in skillet; add beef, 1/2 cup onions and the garlic and saut, breaking up meat with fork, until onions are limp. Add consomm and wine and bring to a boil. Simmer 1 minute, then add next 5 ingredients and mix well. Add salt to taste and pour into casserole baking dish (9 x 13). Poke tortilla pieces into meat mixture and bake, uncovered, in preheated oven, 350°, for about 25 minutes. Remove from oven and sprinkle with cheese. Then top with remaining green onion, lettuce, avocado and tomato. Serve at once. Makes 4 to 6 servings.
