Ingredients

  • 2 cans refried beans
  • 1 1/2 lb. ground beef, browned and drained
  • 2 medium size jars salsa (Picante), drained if watery
  • 16 oz. sour cream
  • 4 Tbsp. mayo
  • 1 packet dry taco seasoning
  • 1 large pkg. shredded cheese (mix of Cheddar and Monterey Jack)
  • 1 small pkg. just shredded Cheddar
  • 1 tomato, diced
  • 1 green pepper, diced
  • scallions, chopped (enough for topping)

Directions

    Combine 2/3 sour cream, mayo and dry taco seasoning; set aside.

    Layer, ingredient by ingredient, in 13 x 9-inch oblong pan refried beans, ground beef, salsa, small package of Cheddar, 1/3 sour cream, mayo mixture, rest of cheese, tomato, pepper and scallions.

    Bake at 350° for 25 minutes.
