  • 1 lb. ground beef
  • 1 pkg. taco seasoning
  • 1 can Ro-Tel
  • 1 (16 oz.) can refried beans
  • 1 (8 oz.) sour cream
  • 1 lb. Mexican Velveeta cheese
  • 1/2 c. grated Cheddar cheese
  • green pepper, chopped
  • black olives, sliced

Directions

    Brown and drain ground beef. Add taco seasoning according to package directions. Place in bottom of 9 x 13 casserole dish and allow to cool. Layer sour cream over ground beef. Layer refried beans over sour cream. Melt Velveeta cheese; add drained Ro-Tel and pour over beans. Top with grated Cheddar cheese. Bake at 300° for 30 minutes or until hot and bubbly. Garnish with green pepper and olives. Serve with tortilla chips.
