- 3 large baking potatoes, baked
- 1 tablespoon butter or 1 tablespoon margarine, melted
- 1 lb ground beef
- 12 cup chopped onion
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 1 envelope taco seasoning
- 1 cup shredded cheddar cheese
- 13 cup sour cream
- 2 green onions, sliced
Directions

1Cut potatoes in half lengthwise.

2Carefully scoop out pulp, leaving a thin shell (save pulp for another use or discard).

3Brush inside and outside of potato shells with butter.

4Place cut side up on an ungreased baking sheet.

5Bake, uncovered at 375 degrees for 10-15 minutes.

6Meanwhile, in a skillet, cook beef and onion over medium heat until meat is browned; drain.

7Add tomatoes and taco seasoning.

8Bring to a boil.

9Reduce heat; simmer, uncovered, for 20 minutes.

10Spoon into potato shells; sprinkle with cheese.

11Bake, uncovered, 5-10 minutes longer or until cheese is melted.

12Top with sour cream and onions.
