- 14 cup olive oil (more if needed)
- 1 cup sesame seeds
Directions

1Preheat your oven to 350F (177 C).

2* Spread your sesame seeds on a roasting tray, and toast in the oven for 15 minutes, stir occasionally to toast evenly.

3Do not allow to brown as this impairs the flavor.

4* Remove the sesame seeds from the oven and allow to cool briefly.

5* Put the toasted sesame seeds in your blender and add half the oil.

6* Blend the mixture, adding additional oil gradually to form a smooth paste.

7Add more oil if needed for smooth consistency but make sure that it is still a paste and not too thin.

8* When the mixture is evenly smooth, and further blending does not further refine the texture, transfer your tahini to a tight fitting glass jar using a flexible spatula, if you have one, to reduce waste.

9Tahini may be kept in the refrigerator for many weeks in a well-sealed jar.
