- 2 c. diced celery
- 2 c. diced leeks
- 1 medium onion, minced
- 3/4 c. margarine
- 4 qt. lightly packed day-old bread cubes
- add 4 or 5 slices regular bread (if needed)
- 7 or 8 tsp. poultry seasoning or crushed sage
- 1 tsp. pepper
Directions

1Simmer celery and leeks in boiling water for 15 minutes or until tender.

2Drain, reserving 2 cups of the liquid.

3Cook the onion in the butter over low heat until tender, but not brown. Mix bread and seasonings together.

4Add celery , leeks, as much reserved liquid as you need to make moist, butter and onion.

5Mix together with a fork.

6Stuffs a 10 to 12 pound bird.
