Ingredients

  • 2 c. diced celery
  • 2 c. diced leeks
  • 1 medium onion, minced
  • 3/4 c. margarine
  • 4 qt. lightly packed day-old bread cubes
  • add 4 or 5 slices regular bread (if needed)
  • 7 or 8 tsp. poultry seasoning or crushed sage
  • 1 tsp. pepper

Directions

    Simmer celery and leeks in boiling water for 15 minutes or until tender.

    Drain, reserving 2 cups of the liquid.
  3. 3
    Cook the onion in the butter over low heat until tender, but not brown. Mix bread and seasonings together.

    Add celery , leeks, as much reserved liquid as you need to make moist, butter and onion.

    Mix together with a fork.
  6. 6
    Stuffs a 10 to 12 pound bird.
