  • 1 lb. ground beef
  • 1/3 c. chopped onion
  • 1 (16 oz.) can whole tomatoes (undrained)
  • 1 (12 oz.) can corn with peppers, drained
  • 1 (8 1/2 oz.) can cream-style corn
  • 1/4 c. cornmeal
  • 1 Tbsp. chili powder
  • 1 1/2 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/3 c. coarsely chopped black olives
  • 1 c. shredded Cheddar cheese

Directions

    In large skillet, brown ground beef and onion; drain off excess fat.

    Add tomatoes, corn, cornmeal and seasonings; simmer, uncovered, for 10 minutes.

    Stir in olives.

    Turn into 8-inch square dish.

    Sprinkle cheese over meat mixture.

    Carefully spoon topping over cheese, spreading batter out to edges.

    Bake at 425° for 15 to 20 minutes or until top is lightly browned.
