Ingredients
- 1 1/2 lb. ground beef
- 1 medium onion, diced
- 1/2 c. cooking oil
- 1 Tbsp. butter
- 1 1/2 tsp. salt
- 1 egg, lightly beaten
- 1/2 c. milk
- 1 clove garlic, diced
- 1 Tbsp. chili powder
- 1 lb. can tomatoes
- 1 lb. can whole corn
- 1 can ripe olives
- 1 c. yellow corn meal
Directions

1Brown meat and onion in butter and oil until onions are tender; drain meat mixture.

2Add garlic, salt, chili powder, tomatoes, corn and olives.

3Cook about 15 minutes.

4Combine egg and milk; add to corn meal slowly.

5Add to meat mixture a little at a time, stirring well.

6Pour into a greased casserole in 350° oven and bake for 1 hour.

7Top with grated sharp Cheddar cheese and melt the last 10 minutes of baking.
