Tamale Soup

Ingredients
- 1 lb. ground beef or turkey
- 1 large onion, diced
- 1 green bell pepper, diced
- 1 c. frozen whole kernel corn
- 4 c. water
- 4 beef bouillon cubes
- 1 Tbsp. chili powder
- 1 or 2 cans diced tomatoes or Ro-Tel tomatoes with green chilies (if you really like it hot!)
- salt and pepper to taste
- 10 tamales
Directions

1Brown meat and drain well.

2Add onion and green pepper; cook until tender.

3Add corn, water, bouillon, chili powder, tomatoes, salt and pepper.

4Simmer 30 minutes or more until about 30 minutes before serving.

5Cut tamales into bite size chunks and add to soup.

6Gently stir and simmer for about 30 minutes.

7Serve with tortillas or cornbread.
