  • 2 egg whites
  • 1/2 tsp. vanilla
  • 2/3 c. sugar
  • 1 c. flaked coconut
  • 1/2 c. finely chopped pecans
  • 2 tsp. grated tangerine peel or orange peel

Directions

    In a small mixer bowl, beat egg whites and vanilla until soft peaks form.

    Gradually add sugar, beating until stiff peaks form. Fold in coconut, pecans and peel.

    Drop by rounded teaspoonfuls 1 1/2 inches apart onto a greased cookie sheet.

    Bake in a 325° oven for 10 to 12 minutes or until done.

    Remove and cool.
